Last updated: 23 July 2026
Data Controller
The Data Controller is Rondolino Società Cooperativa Agricola, with registered office at Tenuta Colombara, 13046 Livorno Ferraris (VC), Italy — VAT No. 01986880027 (hereinafter, the "Controller").
Email: shop@acquerello.it — Tel.: 0161 477832.
The Controller has appointed a DPO, Luigi Mattea, who can be contacted at dpo@acquerello.it. For the processing of personal data, please refer to the Privacy Policy.
1. What cookies and similar technologies are
Cookies are small text files that the websites visited send to the user's terminal (computer, smartphone, tablet), where they are stored to be retransmitted to the same websites on subsequent visits. Similar technologies (e.g. pixels, web beacons, local storage, SDKs, device identifiers) allow information on the device to be collected or stored and are here collectively referred to as "cookies".
Cookies are distinguished:
- by ownership: "first-party" cookies, managed by the Controller, and "third-party" cookies, managed by other parties;
- by duration: "session" cookies, deleted when the browser is closed, and "persistent" cookies, retained until they expire or are removed;
- by purpose: technical cookies (necessary and functional) and non-technical cookies (statistical/analytical and marketing/profiling).
2. Legal basis and consent
Technical cookies (necessary for the operation of the website and for the provision of services requested by the user) do not require consent: the legal basis is the legitimate interest of the Controller (Art. 6(1)(f) GDPR) and, for strictly necessary cookies, Art. 122 of the Privacy Code. In particular, the cookies necessary for the operation of the e-commerce platform (management of the session, the cart, authentication and security) are technical cookies and do not require consent.
Statistical and marketing cookies (including third-party and profiling cookies) are installed only with the prior consent of the user, which must be freely given, specific, informed and revocable (Arts. 6(1)(a) and 7 GDPR; Art. 122 of the Privacy Code).
On the first visit, a banner is displayed allowing the user to Accept all, Reject all (with equal prominence) or Customise their choices by category. No non-technical cookie is installed before an active choice by the user. Merely continuing to browse, scrolling or closing the banner does not constitute consent.
3. Management and withdrawal of consent
The collection and recording of consent are managed through the Cookiebot platform, provided by Usercentrics A/S (Havnegade 39, 1058 Copenhagen, Denmark), which acts as a data processor. Consent is retained for a maximum of 12 months, after which the request is presented again.
The user may change or withdraw consent at any time by clicking on the dedicated cookie-management control that is present on the website, as well as through the browser settings, without prejudice to the lawfulness of processing based on the consent given before withdrawal.
In addition, for participating third-party advertising cookies, consent may be managed through www.youronlinechoices.eu. Disabling technical cookies may compromise the proper functioning of the website.
4. Categories of cookies used
- Necessary — operation of the website, management of the cart and account, authentication, security, load balancing, storage of consent (typical PrestaShop technical cookies, e.g. session cookies and cart cookies). They do not require consent.
- Preferences/Functional — storage of language, currency and other user choices.
- Statistics — aggregate analysis of the use of the website. They require consent.
- Marketing — advertising and remarketing, including by third parties. They require consent.
